Ingredients:
- 2 chicken breasts, sliced into thin strips
- 2 tablespoons gluten-free soy sauce or tamari
- 1 tablespoon honey or maple syrup
- 1 tablespoon sesame oil
- 1 tablespoon olive oil
- 1 bell pepper, sliced
- 1 carrot, julienned
- 1 zucchini, sliced
- 1 cup broccoli florets
- 2 garlic cloves, minced
- 1 teaspoon grated ginger
- Cooked rice or gluten-free noodles for serving
Instructions:
- In a bowl, marinate the chicken strips with soy sauce, honey, and sesame oil. Set aside for 15 minutes.
- Heat olive oil in a large pan over medium heat. Add garlic and ginger, sauté for 1-2 minutes.
- Add the marinated chicken and cook until browned and fully cooked.
- Add the bell pepper, carrot, zucchini, and broccoli to the pan. Stir-fry until the vegetables are tender-crisp.
- Serve the stir-fry over cooked rice or gluten-free noodles.
