Gluten-Free Chicken Stir-Fry

Ingredients:

  • 2 chicken breasts, sliced into thin strips
  • 2 tablespoons gluten-free soy sauce or tamari
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 1 zucchini, sliced
  • 1 cup broccoli florets
  • 2 garlic cloves, minced
  • 1 teaspoon grated ginger
  • Cooked rice or gluten-free noodles for serving

Instructions:

  1. In a bowl, marinate the chicken strips with soy sauce, honey, and sesame oil. Set aside for 15 minutes.
  2. Heat olive oil in a large pan over medium heat. Add garlic and ginger, sauté for 1-2 minutes.
  3. Add the marinated chicken and cook until browned and fully cooked.
  4. Add the bell pepper, carrot, zucchini, and broccoli to the pan. Stir-fry until the vegetables are tender-crisp.
  5. Serve the stir-fry over cooked rice or gluten-free noodles.
