Gluten-Free Pancakes

Ingredients:

  • 1 cup gluten-free all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter or oil
  • 1 teaspoon vanilla extract

Instructions:

  1. In a bowl, mix the gluten-free flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Heat a non-stick pan over medium heat. Pour 1/4 cup of batter onto the pan and cook until bubbles form on the surface, then flip and cook until golden brown.
  5. Serve with your favorite toppings like maple syrup, fresh fruit, or yogurt.
